No Yeast Bread/Buns

Quick and easy gluten-free No Yeast Bread or Buns comes together in no time.  It's perfect for breakfast sandwich brushed with garlic herb butter or make a quick bread for bread pudding!

INGREDIENTS

2 cups Lorraine’s GF All Purpose Flour

1/4 cup rice flour

1/4 cup dry milk powder (optional for tastier and more tender rolls)

2 teaspoons baking powder

1 teaspoons baking soda

1/2 teaspoon salt

1 1/2 cups buttermilk

3 tablespoon granulated sugar

3 tablespoon light olive oil

2 large eggs

Nut-Free

Oven Temperature:

Preheat to 425°F

Bake Time:

18 – 20 minutes for rolls, 30-45 minutes for loaf

  1. For ROLLS: line large baking sheets with parchment paper or for best results, spray muffin top baking pan with gluten-free oil spray.
  2. For LOAF:  Using a gluten-free oil spray, spray the bottom and sides of a loaf pan.  Line with parchment paper.
  3. In a separate mixing bowl, whisk together GF All Purpose Flour, rice flour, dry milk powder, baking powder, baking soda, and salt, set aside.
  4. In a bowl of a stand mixer fitted with a paddle, whisk together the buttermilk, granulated sugar, oil and eggs until fully combined.
  5. Add the dry ingredients to the wet ingredients and mix until just combined, making sure not to over mix the batter. Pour into the loaf pan and smooth the top.  For rolls:  scoop about 3 to 4 tablespoons dough onto the baking sheet or muffin pan.
  6. Bake until golden brown and a toothpick inserted into the center comes out dry.
